Beachside coconut flan
But I do miss my piece of beachside coconut flan. The one I used to have in Acapulco, many Decembers ago, growing up. My favorite was from Pipo’s, a restaurant in “la Costera”, an old neighborhood along the beach. It has a creamy and smooth layer on top that blends into a bottom layer of softened and nicely chewy coconut. I have tried a couple versions and the best one is also the simplest one.
Birthday Cake with Meringue and Strawberry Jam
One of the cakes that left me with a permanent impression went something like this: A couple layers of fluffy and moist vanilla cake, a foamy and soft meringue filling paired with old fashioned strawberry jam and pecans, the same soft meringue layered all over the top, some more pecans and whatever decorations you fancied. That cake, by itself, made a party happen. It was a creation worthy of its own celebration.
Eggs a la Mexicana
There are countless egg dishes in Mexican cooking, one better than the other. But these are the ones I prepare the most at home. They are easy to make, super tasty and dress up a breakfast in a wink. What’s more, I always have oil, eggs, tomatoes, onion and either Jalapeño or Serrano chiles handy.

Hibiscus Flower Concentrate
Although not native to Mexico, with a contested origin between Africa and India, jamaica flowers arrived in colonial times and are now deeply integrated into Mexican cuisine. Mainly used to prepare agua de jamaica, one of the freshly flavored waters (aguas frescas), they are enjoyed daily throughout Mexico.
Juju’s Birthday Cake
After playing around with a couple ideas, a cross between my oldest sons’ favorite camp cake and what I remember from my growing up birthday cakes from Sanborns (a Mexican store famous for making incredible cakes) is what creates: Juju’s birthday cake! Thank the heavens and the seas for the wonderful surprises one can encounter while playing in the kitchen. It just never stops! This one is definitely worth a try.

Pickled Jalapeños (with Carrots and Onions Too!)

Yellow Rice

Ironically, although saffron was brought to Mexico by the Spaniards almost five centuries ago and achiote seeds are native to Mexico, it is the saffron based rice which is considered to be the Traditional Yellow Rice in regions like Yucatán.
