🥄 Ingredients

  • 2 pounds mini bell peppers
  • 1 tablespoon olive oil
  • 1 pound ground turkey ((ground chicken or ground beef also work))
  • 2 tablespoons taco seasoning ((homemade or store-bought))
  • 1 tablespoon tomato paste
  • 1 (15-ounce) can black beans, (drained and rinsed)
  • 1 (15-ounce) can yellow corn, (drained and rinsed)
  • 2 cups shredded Mexican blend cheese
  • For topping: diced avocados, diced onions, chopped cilantro, sour cream or Mexican crema

👨‍🍳 Instructions

  1. Preheat oven to 400℉. Line a baking sheet with parchment paper.

  2. Cut the stems and tops off the mini bell peppers, then cut in half lengthwise and remove the seeds and veins. Place on the prepared baking sheet in a single layer with the insides facing up. Set aside.

  3. In a large bowl, add ground turkey and taco seasoning. Mix together until the seasoning is well combined with the meat.

  4. Heat the oil in a large skillet over medium-high heat. Add the ground turkey and taco seasoning. Sauté, stirring occasionally, for 8-10 minutes until the meat is fully cooked.

  5. Add the tomato paste and stir until it's fully combined with the ground turkey.

  6. Stir in black beans and corn. Remove the skillet from the heat.

  7. Spoon the ground turkey filling onto the mini bell peppers. Top with shredded cheese and bake in the oven for 10-15 minutes.

  8. Remove from the oven and top with cilantro, onions, avocados, and a drizzle of Mexican crema. Serve immediately.
